It was once started as a Pet Nat from Melnik Grapes. They saw how good it goes and decided to "uplift" it to a great champagne quality. And here it goes, the Satin Ancestrale, more than 5 Years fermentation in  the bottle. Very tasty and not the least: sexy looking bottle that makes it the best gift ever! 

Natural Ancestral Sparkling Wine is made using the ancestral method, meaning the “ancient method.”

This style of sparkling wine production originates from France and is known as méthode ancestrale. Developed in the 16th century, it is the oldest method for producing sparkling wine and results from a single, continuous alcoholic fermentation, which is interrupted approximately halfway through by lowering the wine’s temperature to a level at which the yeast cells become dormant.

Saten Ancestrale is aged in the bottle.
