It was once started as a Pet Nat from Melnik Grapes. They saw how good it goes and decided to "uplift" it to a great champagne quality. And here it goes, the Satin Ancestrale, more than 5 Years fermentation in  the bottle. Very tasty and not the least: sexy looking bottle that makes it the best gift ever! 

Logodaj Winery is among the established a bit bigged producers in the Melnik region, famos for its MELNIC grape variety sparklings, Rose and red ( we have them: Rose Nobile, Melnik 55 in magnum and a normal bottle and now, NEW, the Bubbles). 

Variety: 100% Wide Melnik vine - the favorite wine grape of Winston Churchill

Terroir: The vineyards are located in the Struma Valley - soils are mostly clayey, rich in lime, with a continental climate and large day-night amplitudes, suitable for natural and structured wine.

Vinification: The wine is produced using the méthode ancestrale - first fermentation in stainless steel, and the second in the bottle over the fine lees for more than 5 years, without the addition of sugar or oak.

Color: Golden and sparkling with a creamy and persistent perlage
Aroma: Intense and elegant - notes of white fruit heart, honey, forest, herbs and lemon butter pie
Taste: Full and harmonious, with a complex sweet-sour balance, great play of bubbles and a long malty-mineral finish

Food pairing: Perfect as an aperitif, with seasonal fruits, salads, soft cheese or fish.

Serving temperature: 6°–8°C

Aging potential: Aging continues for at least 6 years in bottle, recommended to be consumed young or slightly mature
